Israeli Chopped Salad

Ingredients

  • 3 medium Kirby cucumbers or 6 small seedless Israeli cucumbers, chopped into small cubes
  • 4 plum tomatoes, chopped into small pieces
  • 1 cup fresh parsley leaves, chopped
  • 1/2 cup fresh mint leaves, chopped
  • 1/2 cup olive oil
  • 2 tbsp. fresh lemon juice
  • Coarse salt and black pepper to taste

Directions

  1. Combine all the ingredients in a bowl. Refrigerate for up to 8 hours.
