Seared Sesame Tuna with Watermelon Fire-and-Ice Salsa

Ingredients

  • For Salsa:
  • 2 1/2 cups chopped seedless red and/or yellow watermelon
  • 3/4 cup chopped mango
  • 1/2 cup chopped green bell pepper
  • 2 tbsp. lime juice
  • 2 tbsp. chopped fresh cilantro
  • 2 tbsp. chopped green onion
  • 1 tbsp. seeded, finely chopped jalapenos
  • 1/2 tsp garlic salt
  • For Tuna:
  • 6 tbsp. sesame seeds
  • 2 tbsp. black sesame seeds
  • 1 tbsp. soy sauce
  • 1 tsp honey
  • 1 tsp lime zest
  • 4 ahi tuna steaks
  • 1 tbsp. canola oil
  • Lime wedges, for serving
  • Chopped fresh cilantro, for serving

Directions

  1. Make salsa: Mix together watermelon, mango, bell pepper, lime juice, cilantro, green onion, jalapeno and garlic salt. Set aside.

  2. Make Tuna: Stir together sesame seeds and black sesame seeds on a small plate. Stir together soy sauce, honey and lime zest in a small bowl. Brush soy sauce mixture onto the top and bottom of each tuna steak, then press steaks into sesame seed mixture to coat both sides.

  3. Heat a large skillet over medium-high heat. Add oil and swirl to coat the bottom of the pan. Sear tuna on both sides until golden but still pink in the center, about 45 seconds per side for 1-inch-thick fillets. Serve tuna with salsa and lime wedges. Top with cilantro.
