Poblano and Ground Pork Tacos

Ingredients

  • 1 tbsp. olive oil
  • 1 cup halved and thinly sliced red onion
  • 1 poblano pepper, seeded and chopped
  • 10 oz. ground pork
  • 1 tbsp. taco seasoning
  • 2 tbsp. chicken broth
  • 1 tbsp. tomato paste
  • 1/4 cup sour cream
  • 2 tsp fresh lime juice
  • 6 (6-inch) flour or corn tortillas, warmed
  • Kiwi Salsa (see recipe)
  • Chopped fresh cilantro, for serving

Directions

  1. Heat oil in a large skillet over medium-high heat. Add onion and poblano pepper. Cook, stirring occasionally, until softened and lightly charred, about 4 minutes. Add pork and taco seasoning. Cook, breaking meat up with a wooden spoon, until pork is well browned and cooked through, about 5 minutes. Reduce heat to medium low. Add chicken broth and tomato paste. Cook and stir until mixture is evenly coated, about 2 minutes.

  2. Meanwhile, stir together sour cream and lime juice. Spread sour cream mixture onto tortillas. Top with pork mixture and Kiwi Salsa. Serve topped with cilantro.
