Ingredients

  • 1/2 cup butter, melted
  • 1/2 cup light brown sugar
  • 1/3 cup creamy peanut butter
  • 1/4 cup white sugar
  • 1 egg, lightly beaten
  • 1 cup flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup mini marshmallows
  • 1/2 cup semisweet chocolate chips

Directions

  1. Preheat oven to 350. Line an 8-inch square baking pan with parchment paper, leaving a 2-inch overhang. Coat parchment with cooking spray.

  2. Stir together butter, brown sugar, peanut butter, and white sugar in a large bowl until smooth. Add egg and stir until combined. Stir together flour, baking powder and salt in a bowl. Gradually add flour mixture to butter mixture while stirring until batter is just mixed. Gently fold in marshmallows and chocolate chips. Spread batter into prepared pan.

  3. Bake until edges are lightly browned and center has moist crumbs when a toothpick is inserted, about 30 minutes. Cool completely in pan on a wire rack, about 1 hour. Use parchment overhang to lift cooled blondies from pan. Cut into 9 squares.
