Halibut with vegetables

Ingredients

  • 2 filets Halibut (or cod)
  • Old Bay, salt and pepper
  • Butter
  • 1 shallot
  • Garlic
  • Sliced mushrooms
  • 28 oz can of diced tomatoes
  • Oregano, crushed red pepper
  • 1 can sliced artichoke hearts
  • Leaf spinach

Directions

  1. 2 Halibut filets (or cod)

  2. cook in pan with olive oil

  3. season with Old Bay, salt and pepper

  4. Chop 1 shallot, handful of garlic

  5. Saute in olive oil the shallots and then add garlic

  6. Add handful of sliced mushrooms, 28 oz can of diced tomatoes

  7. Add oregano and crushed red pepper, salt and pepper

  8. One can sliced artichoke hearts, drained,

  9. handful of spinach and cook

  10. Transfer to bowl

  11. To skillet add 2 tbsp of compound butter

  12. Add fish, cook 3 minutes on each side

  13. Remove to a plate and add vegetable mixture to pan to warm up

  14. Put on plate and top with fish
