Chile Spice Mix

Ingredients

  • 1 tbsp. + 1 tsp. whole coriander seeds
  • 2 tsp whole cardamom seeds
  • 2 tsp whole cumin seeds
  • 6 tbsp. Aleppo pepper
  • 2 tsp kosher salt
  • 2 tsp ground dried lime or sumac
  • 1/2 tsp ground cinnamon

Directions

  1. In a small dry skillet, toast coriander seeds, cardamom seeds, and cumin seeds over medium until fragrant and spices begin to dance around in the pan, 2 to 3 minutes. Remove from pan and cool completely. In a spice grinder or mortar and pestle, grind spices to a coarse powder. Stir together with Aleppo pepper, kosher salt, ground dried lime or sumac, and ground cinnamon.
