Sun-Dried Tomato-Parmesan Crisps

Ingredients

  • 3 tbsp. sun-dried tomato paste
  • 1 tbsp. olive oil
  • 1 piece store-bought puff pastry, thawed
  • 1/2 cup grated Parmesan
  • 1/4 tsp black pepper

Directions

  1. Preheat the oven to 375 with a rack in the center position. Combine the tomato paste and olive oil in a small bowl.

  2. On a lightly floured surface, roll out the puff pastry to a 12-inch square. Transfer to a parchment-lined baking sheet.

  3. Spread the tomato paste mixture evenly over the pastry with a rubber spatula. Sprinkle with the cheese and pepper. Using a pizza wheel or a sharp knife, cut into quarters in one direction and then into sixths in the other, to make 24 pieces.

  4. Bake for 20 to 22 minutes, until puffed and golden. Transfer to a wire rack and cool to room temp before serving.
