Thai Peanut Sauce

Ingredients

  • 1 cup plus 1 tbsp. unsalted roasted peanuts
  • 1 garlic clove, smashed and peeled
  • 2 tbsp. finely chopped palm sugar or light brown sugar
  • 2 tbsp. fish sauce
  • 1 tbsp. soy sauce
  • 1 1/2 cups unsweetened coconut milk
  • 1 tsp Asian sesame oil
  • 1 tbsp. fresh lime juice
  • 1/4 cup unsweetened shredded coconut

Directions

  1. Combine 1 cup of the peanuts with the remaining ingredients in a blender and blend until smooth. Transfer to a serving bowl.

  2. Chop the remaining tbsp. of peanuts and sprinkle over the sauce before serving.
