Homemade Granola

Serves 10 people

Ingredients

  • 5 1/2 cups rolled oats
  • 1-2 cups dried fruit (craisins, golden raisins, or dried cherries)
  • 1 cup nuts (walnuts, pecans, cashews, macadamia nuts)(optional)
  • 1/2 cup honey (or maple syrup)
  • 1/2 cup coconut or olive oil
  • 1 tsp vanilla
  • 1/2 tsp salt

Directions

  1. Mix oats, dried fruit, and nuts. Mix oil, honey/syrup, and vanilla in mixing bowl and pour over the oat mixture. Mix well. Sprinkle with salt and mix well.

  2. Spread over a baking sheet with parchment paper on it.

  3. Cook at 350 for about 20 minutes or until golden brown. Take out and let cool completely before break into little chunks and storing in an airtight container.
