Rice Cooker Chicken Congee

Ingredients

  • •1/2 cup rice
  • •4 cups water
  • •1 cup shredded cooked chicken (a great way to use up leftover rotisserie chicken)
  • •1 tsp chopped ginger root
  • •salt
  • •chopped green onions

Directions

  1. •Put the rice, water, ginger and chicken in the rice cooker. Turn it on to the cook setting. The congee needs to cook for about 1 ½ hours, so you will need to press the “cook” button 2 or 3 times to turn the rice cooker back on when it turns off automatically. Stir occasionally. If you have trouble getting the cook button to stay on (it usually pops up automatically), let the congee cool for a few minutes with the lid open before closing the lid and cooking again.

  2. •After about 1 ½ hours of simmering, the rice should have broken down and the congee should be thick.

  3. •Add salt to taste, and serve with chopped green onions sprinkled on top. Many people like to mix a raw egg into their hot congee, and season the congee with a little soy sauce.
