Eye of Round Roast

Ingredients

  • 2.5 - 3 lb Eye Roast
  • 1 tsp Kosher Salt
  • 1 tsp dried crushed Rosemary
  • 3/4 tsp Black Pepper
  • 3/4 tsp Onion Powder
  • 1/2 tsp Paprika

Directions

  1. Set roast out 1 hour before preparing

  2. Preheat oven to 500

  3. Dry roast with paper towels

  4. Rub roast with olive oil

  5. Combine all spices & season all sides

  6. Roast 15 minutes

  7. Reduce heat to 300

  8. Roast 40-50 minutes more

  9. Check after 35 minutes

  10. Roast should reach 125 degrees

  11. Let rest 15 minutes.
