Bottom Round Roast

Ingredients

  • Bottom Round Roast
  • 1 tsp Parsley
  • 2 tsp Basil
  • 2 tsp Thyme or Rosemary
  • 2 tsp minced Garlic
  • 1 tsp Black Pepper
  • 1 tsp Sea Salt

Directions

  1. Preheat oven to 170
  2. Dry roast with paper towels

  3. Brush with olive oil

  4. Rub combined seasoning all over

  5. Insert meat thermometer

  6. Place in roasting pan, fat side up

  7. Cook 2 hours/lb until temp reaches 120

  8. Tent with foil & rest 10 minutes to 2 hours

  9. 20 minutes before eating preheat oven to 500-550

  10. Remove foil & return roast to oven for 10-12 mintues.

  11. Remove & slice (no need to rest again)
