Beef Stir Fry

Ingredients

  • 1 lb Sirloin or Chuck Steaks
  • Salt & Pepper
  • 1 large Garlic Clove, minced
  • 3 Tbsp canola oil, divided
  • 1 Red Bell Pepper, sliced into 1/4" strips
  • 1 Green Bell Pepper sliced into 1/4" strips
  • 1/2 Yellow Onion, thinly sliced
  • 1 dozen Cherry Tomatoes, halved or one large, roughly chopped
  • 2 Tbsp chopped Cilantro (optional)
  • 1 Tbsp Soy Sauce
  • 2 tsp Sesame Oil

Directions

  1. Season steaks w/ salt, pepper and rub minced garlic over one side.

  2. Place between two sheets of plastic wrap & pound until 1/4" thick.

  3. Let sit for 10 minutes then cut into 1/2" wide strips

  4. Heat 2 Tbsp Oil in large skillet on high heat. Add onions & peppers, cook stirring until just barely tender (1-2 minutes). Remove to bowl & keep warm

  5. Heat additional Tbsp oil on high heat until oil is shimmering but not smoking. Add beef & brown initially without stirring but as soon as it browns on 1 side, then stir. Cook for no more than 1 minute (medium rare)

  6. Add peppers & onions, tomatoes, cilantro, soy sauce & sesame oil & cook for 30 seconds longer stirring.

  7. Remove from heat & serve alone or with rice.
