Fajita Chicken

Ingredients

  • 1 lb Farfalle
  • 2 Tbsp Olive Oil
  • 1 1oz pkg Fajita Seasoning
  • 3/4 lb boneless, skinless chicken tenders rubbed w/ fajita seasoning & cut into 2" pieces
  • 3 small red, yellow or orange bell peppers, seeded & cut into 1/4 x 2" strips
  • 1 1/2 C Half & Half
  • 1/4 C grated Parmesan

Directions

  1. Cook farfalle until al dente, about 10 minutes

  2. Drain, reserving 1/2 C cooking water

  3. Return pasta to pot

  4. In large skillet warm oil over medium heat

  5. Add chicken to skillet & cook 4-6 minutes until cooked through

  6. Remove to plate & cover

  7. Cook bell peppers in skillet, stirring, until just tender, approx 8 minutes.

  8. Add chicken, half & half & stir to scrape up browned bits

  9. Cook 3 minutes, stirring until thickened

  10. Stir in parmesan & cook 30 seconds

  11. Season with salt & pepper

  12. Toss chicken mixture with past – add some pasta water if mixture seems dry.

  13. Serve with parmesan
