zucchini meatballs

Ingredients

  • 2 zucchini shredded
  • 2 cloves garlic
  • 1 1/4 c fresh bread crumbs-used 3/4 c store bought
  • 1/2 c minced parsley leaves
  • 1 t fine sea salt
  • pepper
  • 1/2 t dried oregano
  • 2 large eggs
  • 2/3 c grated pecorino romano cheese- or grated parmesian
  • 1/2-1/3 c flour
  • oil to fry-or can bake them

Directions

  1. oven 350 degrees

  2. spread zucchini on cookie sheet, turn off ioven and leave squash in 2-3 hours(removing excess water)

  3. In large bowl combine garlic, breadcrumbs, parsley, salt, pepper, oregano.eggs and cheese.

  4. coarsely chop zucchini and add to mixture. Chill for 2 or more hours

  5. Form into meatball size

  6. dredge in flour

  7. Fry in cannola oil or bake 350 for 25-30 minutes in oiled casserole
