Cocoanut Cake Grandma Margaret

Ingredients

  • bake 350 degrees
  • 8 inch pans with spray, parchment and dusted
  • 2 1/2 C cake flour
  • 1 t baking powder
  • 1/2 t soda
  • 1/4 t salt
  • 5 large eggs
  • 3/4 C buttermilk, room temperature
  • 1 t vanilla
  • 2 1/2 sticks SALTED BUTTER
  • 2 1/4 C white sugar
  • FROSTING
  • 6 sticks SALTED butter
  • 6c powdered sugar
  • 1/2 C half n half or cocoanut milk
  • 2 t vanilla
  • 2 C sweetened cocoanut

Directions

  1. In bowl whisk together flour, baking powder. baking soda and salt

  2. in another bowl mix together eggs, buttermilk and vanilla

  3. In mixer beat butter and white sugar until fluffy-4-5 minutes

  4. with beater on low add 1/3 flour mixture, half the egg mixture, 1/3 flour mixture, rest egg mixture and last of flour

  5. Then increase speed to medium and beat at least another 1 minute.Fold batter with spatula to get any dry flour from sides or bottom

  6. Divide batter evenly between prepared pans

  7. Bake 15 minutes and quickly move upper pans to bottom and bottom to upper

  8. Bake til toothpick clean about another 12 minutes COOL CAKE

  9. FROSTING

  10. Beat butter about 1 minute

  11. With mixer on low add 1/3 powdered sugar until fully incorporated

  12. Beat 1/3 more sugar and beat 2-3 minutes

  13. Gradually add remaining sugar beating until incorporated-2 minutes

  14. Add the half and half and vanilla

  15. Beat on low about 1 minute

  16. Scrape bowl , increase speed and beat about 1 minute more

  17. Each layer has 3/4 C frosting topped with cocoanut
