Crockpot Split Pea Soup

Ingredients

  • 1 lb split peas, rinsed
  • 1 onion, chopped
  • 2 carrots, peeled and sliced
  • 1 stalk celery, chopped
  • 2 cloves garlic, pressed
  • 1 bay leaf
  • 1 1/2 quarts chicken broth (use water if you are adding a ham bone)

Directions

  1. Put all ingredients in crockpot.

  2. Cover and cook until peas are soft (high 4-5 hours or low 8-10 hours)

  3. Salt and pepper to taste.

  4. Serve with whole grain rolls and a spinach salad.
