Slow Cooker Chocolate Turtles

(from Lisalouisville’s recipe box)

Cook time: 120 minutes

Categories: Desserts

Ingredients

  • 2 cups pecan halves
  • 1 cup semi-sweet chocolate chips
  • 1 cup milk chocolate chips
  • 1 cup caramel bits or caramel squares, unwrapped
  • 2 tablespoons heavy cream or milk
  • Sea salt or coarse salt for sprinkling (optional)

Directions

  1. Layer the Ingredients: In your slow cooker, create layers starting with half of the pecan halves, followed by a layer of the semi-sweet chocolate chips, the milk chocolate chips, the remaining pecans, and finally the caramel bits on top. Drizzle the heavy cream over the top.

  2. Cook: Cover and cook on low for 2-3 hours. Avoid stirring or removing the lid during this time to prevent moisture from getting into the chocolate.

  3. Stir and Scoop: After the cooking time, stir the mixture gently to combine all the ingredients evenly. Then, using a spoon or a small scoop, form clusters of the turtle mixture and place them on a parchment-lined baking sheet.

  4. Cool: Let the turtles cool and harden. You can speed up this process by placing the baking sheet in the refrigerator.

  5. Sprinkle with Salt: Once set, you can sprinkle a tiny bit of sea salt or coarse salt over the turtles for an added flavor contrast, if desired.

  6. Store: Store the chocolate turtles in an airtight container at room temperature or in the refrigerator.
