Lemoncello

Ingredients

  • 1 liter everclear, 1 liter water, 500 gr sugar and 10 untreated lemons

Directions

  1. Peel the lemon skin carefully, making sure you only remove the yellow and not the white part (the white would make the limoncello taste really bitter), put all the skin in a big jar and cover with everclear. Place the jar in a dark cool area and stir every day. I usually let it sit for 2 weeks. Once the 2 weeks are over, remove the peel from the everclear and put them in a sauce pan along with the sugar and lemon. Warm up the mixture until the sugar has completely dissolved. Strain the water mixture and let it cool off. Once is cooled off mix it with the everclear and put in bottles. Leave the bottles in a cool place for about a week. After the week is over the limoncello is ready to go
