moon pie

Ingredients

  • put out 3 1/2 sticks butter to become room temp
  • 2 eggs
  • 2 1/2 C whole milk
  • COOK
  • 6 T flour
  • 1 C milk until forms mixture consistency of mashed potatoes WHISKING CONTINUALLY
  • COOKIE;
  • 1 1/2 sticks room tamp butter
  • 1 1/2 C white sugar
  • 2 eggs room temp
  • 1 1/2
  • C whole milk, room temp
  • 3 C all purpose flour
  • 3/4 C Dutch processed cocoa powder
  • 3/4 t baking powder
  • 2 1/4 t baking soda
  • 1/2 t kosher salt
  • FILLING:
  • 1 C whole milk
  • 6 T flour
  • 2 sticks room temp butter
  • 1 C white sugar
  • pinch kosher salt
  • 2 t vanilla

Directions

  1. make cookies:

  2. PREHEAT OVEN 350

  3. parchment on cookie sheets

  4. MEDIUM SPEED

  5. cream butter and sugar until incorporated

  6. Add vanilla-beat slightly

  7. Add eggs 1 at a time and beat until incorporated

  8. SEPARATE BOWL; DRY INGREDIENTS

  9. flour

  10. cocoa

  11. baking powder

  12. baking soda

  13. salt

  14. Sift dry ingredients into wet

  15. Beat on medium until just combined=no streaks of flour visible

  16. SPOON ONTO COOKIE SHEETS

  17. 2 T and 2 inches apart

  18. BAKE

  19. 12=14 minutes

  20. Transfer to rack and let cool completely

  21. MAKE FILLING

  22. beat butter just until light and fluffy

  23. Add cooled milk and flour mixture, sugar, vanilla and pinch of saltSCRAPE DOWN SIDES OF BOWL AS MIXING
