Baked Cod with Tomatoes and Olives

Ingredients

  • 1 pound cod fillets cut into 2-inch pieces
  • salt and black pepper
  • 1 can diced Italian-style tomatoes, drained
  • 2 Tbsp chopped pitted ripe olives
  • 1 tsp minced garlic
  • 2 Tbsp chopped parsley

Directions

  1. Preheat oven to 400F. Spray 13×9 baking dish with nonstick cooking spray. Arrange cod fillets in pan, season to taste with salt and pepper.

  2. Combine tomatoes, olives and garlic in medium bowl. Spoon over fish.

  3. Bake 20 mins or until fish flakes when tested with fork. Sprinkle with parsley.
