Shrimp Fra Diavolo

Ingredients

  • 1 lb Large Shrimp, peeled & deveined
  • 1 tsp Salt
  • 1 tsp Dried Crushed Red Pepper Flakes
  • 3 Tbsp Olive Oil, plus 1-2 Tbsp
  • 1 Medium Onion, sliced
  • 1 (14.5 oz) can Diced Tomatoes
  • 1 C Dry White Wine
  • 3 Garlic Cloves, chopped
  • 1/4 tsp Dried Oregano Leaves
  • 3 Tbsp Chopped Fresh Italian Parsley Leaves
  • 3 Tbsp Chopped Fresh Basil Leaves

Directions

  1. Toss shrimp in a medium bowl with 1 tsp salt and red pepper flakes.

  2. Heat the 3 Tbsp oil in a heavy, large skillet over medium-high heat. Add shrimp and saute for approx 1 minute, toss and continue to cook until just cooked through (1-2 mins). Transfer to a large plate & set aside.

  3. Add the onion to the same skillet, adding 1-2 Tsp of olive oil to the pan, if necessary. Saute until translucent (about 5 mins). Add Tomatoes with the juices, wine, garlic & oregano. Simmer until sauce thickens slightly (10 mins).

  4. Return the shrimp and any accumulated juices to the tomato mixture, toss to coat and cook for approx. 1 minute

  5. Stir in the parsley & basil.
