Shrimp Fra Diavolo

Ingredients
- 1 lb Large Shrimp, peeled & deveined
- 1 tsp Salt
- 1 tsp Dried Crushed Red Pepper Flakes
- 3 Tbsp Olive Oil, plus 1-2 Tbsp
- 1 Medium Onion, sliced
- 1 (14.5 oz) can Diced Tomatoes
- 1 C Dry White Wine
- 3 Garlic Cloves, chopped
- 1/4 tsp Dried Oregano Leaves
- 3 Tbsp Chopped Fresh Italian Parsley Leaves
- 3 Tbsp Chopped Fresh Basil Leaves
Directions

Toss shrimp in a medium bowl with 1 tsp salt and red pepper flakes.

Heat the 3 Tbsp oil in a heavy, large skillet over medium-high heat. Add shrimp and saute for approx 1 minute, toss and continue to cook until just cooked through (1-2 mins). Transfer to a large plate & set aside.

Add the onion to the same skillet, adding 1-2 Tsp of olive oil to the pan, if necessary. Saute until translucent (about 5 mins). Add Tomatoes with the juices, wine, garlic & oregano. Simmer until sauce thickens slightly (10 mins).

Return the shrimp and any accumulated juices to the tomato mixture, toss to coat and cook for approx. 1 minute

Stir in the parsley & basil.
