Meatballs Espanol

Ingredients

  • 1 lb lean ground beef
  • 1 cup soft bread crumbs
  • 1/4 cup onion, finely chopped
  • 1/4 cup celery, finely chopped
  • 1-1/2 tsp Worcestershire sauce
  • 1 egg
  • 1-1/2 tsp garlic salt
  • 1/4 tsp pepper
  • 1 can stewed tomatoes
  • 12 oz zucchini, thinly sliced
  • 1/2 tsp oregano
  • 1/2 tsp basil
  • 1/2 tsp sugar
  • 1 Tbs cornstarch
  • 1 cup beef broth

Directions

  1. Combine beef, bread crumbs, onion, celery, Worcestershire sauce, egg, garlic salt, and pepper; mix well.

  2. Form into about 12 balls. Place in greased casserole. Bake, uncovered, at 375 for 20 minutes.

  3. In a saucepan combine tomatoes, zucchini, oregano, basil, and sugar. Simmer for 5 minutes. Then blend cornstarch and beef broth. Add to tomato mixture. Pour over meatballs while sauce is hot.

  4. Bake 10 minutes longer. Serve over 3 cups fluffy rice.
