Pumpkin Cookies

Ingredients

  • 4 cups all-purpose flour
  • 2 cups oats, quick or old-fashioned
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp salt
  • 1-1/2 cup butter or margarine, softened
  • 2 cups brown sugar, firmly packed
  • 1 cup sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 Tbs molasses
  • 1 cup chocolate chips or raisins
  • 1 can pumpkin

Directions

  1. Combine flour, oats, soda, cinnamon, and salt; set aside. Cream butter. Gradually add sugars, beating until light and fluffy.

  2. Add eggs, vanilla, and molasses. Mix well.

  3. Alternate additions of dry ingredients and pumpkin, mixing well after each addition. Stir in morsels. Form pumpkins by shaping with a spatula.

  4. Bake at 350 for 20 to 25 minutes, until firm and light brown. Cool and decorate.

  5. Makes about 6 dozen (2 to 4-inch) cookies.
