Pea and Lettuce Soup

Frozen peas are fine unless you have peas in the garden

Prep time: 10 minutes
Cook time: 25 minutes
Serves 4 people

Ingredients

  • 200g frozen peas
  • 1 lettuce (sweet)
  • Good sprig of mint from the garden
  • 1 shallot or medium green onion
  • 1 medium to large potato
  • olive oil
  • Vegetable stock (preferably home made))

Directions

  1. Saute chopped onion/shallot in olive oil over medium heat until soft

  2. Add washed and shredded lettuce (discard any bitter stalks); sweat for about 30 seconds

  3. Add peeled and cubed potato and saute for about one minute being careful not to burn the onions

  4. Add mint sprig

  5. Add hot stock (about 2 litres)

  6. Bring to the boil and simmer for about 20 minutes

  7. Remove the mint sprig and puree with a blender

  8. Serve warm with crusty bread
