chocolate chip zucchini bread

Ingredients

  • 3/4 cup sugar
  • 3 T vegetable oil
  • 2 eggs
  • 1 cup applesauce
  • 2 cups flour
  • 2 T cocoa, unsweetened
  • 1 1/4 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 1/2 cups zucchini, shredded (about 1 medium zucchini)
  • 1/2 cup chocolate chips, semisweet

Directions

  1. Preheat oven to 350 degrees F.

  2. Place sugar, oil, and eggs in a large bowl; beat until well blended. Stir in applesauce.

  3. Combine flour through salt, stirring well with a whisk.

  4. Add flour mixture to sugar mixture, stirring just until moist.

  5. Stir in the zucchini and chocolate chips.

  6. Spoon batter into a 9 × 5 inch loaf pan coated with cooking spray.

  7. Bake at 350 for 1 hour or until a wooden toothpick inserted in center comes out clean.

  8. Cool in pan 10 minutes on a wire rack, and remove from pan.

  9. Cool completely on wire rack.
