Spicy Apple Pancakes with Cider Sauce

Serves 4 people

Ingredients

  • 2 Cups pancake mix
  • 1/2 teaspoon cinnamon
  • 1 egg
  • 1 1/3 cups milk
  • 3/4 cup grated apple (about 2 medium)
  • Cider Sauce (below)
  • 1 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon each cinnamon and nutmeg or 1/2 teaspoon pie spice
  • 2 cups apple cider
  • 2 tablespoons lemon juice
  • 1/4 cup butter (optional)

Directions

  1. Beat Baking mix, cinnamon, egg and milk with beater until smooth. Sitr in apaple. Grease griddle if necessary. Pour batter by 1/4 cup or more measuring cupfuls onto hot griddlw. Bake until bubbles appear. Thur; bake other side until golden brown. Serve warm with Cider Sauce; if you widh, top with dairy sour cream.

  2. For Cider Sauce: mix sugar, cornstarch, cinnamon and nutmeg; stir in apple cider and lemon juice. Cook in saucepan or micro wave until thickened and boils. cook one minute. Remove from heat; stir in butter.
