Cheesecake Cupcakes

Eliminate the Nilla wafers to make this a gluten-free dessert!

Serves 24 people

Ingredients

  • 2 8oz packages of cream cheese
  • 2 eggs
  • 3/4 cup sugar
  • Nilla wafers cookies

Directions

  1. Using an electric mixer, blend the cream cheese (softened), eggs, and sugar on medium speed until all lumps are eliminated (scrape the bowl after a minute or two, then mix again, then scrape, then mix).

  2. Line a muffin tin with cupcake liners, put a nilla wafer on the bottom of each liner.

  3. Fill each cup about halfway with cream cheese mixture, bake at 350 for 20 mins. Let cool.

  4. After cupcakes are cool, top with fruit, instant pudding, or just eat them plain!
