Twice Baked Casserole

Ingredients

  • Potatoes (I use about 7-10 depending on size)
  • Butter or margarine
  • Bacon
  • Shredded cheese (I use the Kraft shredded casserole cheese)
  • Sour Cream
  • Chives or green onions

Directions

  1. Clean and cut potatoes into bite-sized pieces to fill a casserole dish 3/4 full.

  2. Put cut potatoes in a pot with water and boil til tender. Meanwhile fry the bacon til crisp; drain and crumble.

  3. Place boiled potatoes back in casserole dish. Slice pats of butter or margarine over the potatoes. (I usually use about 1 stick). Cover with grated cheese and bacon. At this point you may cover with foil or plastic wrap and refrigerate til you are ready to serve.

  4. Heat in oven @ 350 until cheese is melted.

  5. Spoon sour cream over top, followed by the chopped onions or chives, or leave sour cream and chives on side.
