Sauteed Tilapia with Sweet Basil

If frozen remove packaging and thaw in the refrigerator for 4-6 hours. Or thaw for 30 minutes in bowl of cold water.

Serves 4 people

Ingredients

  • 12 oz Tilapia fillets
  • 1T olive oil
  • 1/4 c. flour
  • 1/4 c. Parmesan cheese
  • 1 t. dried basil or 1 T. chopped fresh basil
  • 1/8 t. salt and pepper
  • 1 lemon
  • paprika

Directions

  1. Brush Tilapia fillets with olive oil and set aside.

  2. Mix flour, cheese, basil, salt and pepper together in a bowl.

  3. Coat fish with this mixture.

  4. Melt margarine in skillet on very low heat.

  5. Cover and saute fish about 10 minutes per side, squeezing on fresh lemon and sprinkling with paprika.
