Hot Fudge Sundae Cake

Serves 8 people

Ingredients

  • 2 c fat-free vanilla ice cream
  • 1 c unbleached flour
  • 3/4 c granulated sugar
  • 2 tbsp cocoa powder
  • 2 tsp baking powder
  • 1/2 c skim milk
  • 1 tbsp olive oil
  • 1 tsp pure vanilla extract
  • 1 c brown sugar - packed
  • 1/4 c walnuts - chopped
  • 1/4 c cocoa powder - sifted
  • 1-3/4 c hot water

Directions

  1. Scoop 1/4 c ice cream into 8 serving dishes. Place on chilled baking

  2. eet. Freeze uncovered no longer than 24 hrs. Preheat oven to 350.

  3. Prepare a 9 × 9 pan with cooking spray and flour; set aside.

  4. In a mixing bowl, combine flour, granulated sugar, 2 tablespoons cocoa

  5. powder, and baking powder. In another mixing bowl, combine milk, oil,

  6. vanilla extract, and walnuts. Mix dry ingredients with wet ingredients just

  7. until moistened. Spread into prepared pan. Sprinkle with brown sugar and

  8. remaining cocoa powder. Pour hot water over batter. Bake for 40 min. Let

  9. stand 15 min. Top ice cream with cake and spoon sauce over each serving.
