Cinnamon Rolls

Ingredients

  • 1/4 cup warm water
  • 1/4 cup butter, melted
  • 1/2 3.4 oz. package instant vanilla pudding mix
  • 1 cup warm milk
  • 1 large egg
  • 1 tablespoon white sugar
  • 1/2 teaspoon salt
  • 4 cups bread flour
  • 1 .25 oz. package active dry yeast
  • 1/4 cup butter, softened
  • 1 cup brown sugar
  • 4 teaspoons ground cinnamon
  • optional: 3/4 cup chopped pecans
  • 1/2 of 8 oz. package cream cheese, softened
  • 1/4 cup butter, softened
  • 1 cup confectioner’s sugar
  • 1/2 teaspoon vanilla extract
  • 1 1/2 teaspoons milk

Directions

  1. In a large bowl, combine warm water, sugar, and yeast. Let sit until bubbly.

  2. Add melted butter, vanilla pudding, warm milk, egg, salt, and bread flour to bowl. Mix. Let rise for one hour.

  3. Roll dough into a 10×17 inch rectangle. Spread with 1/4 cup softened butter.

  4. In a separate bowl, stir together brown sugar, cinnamon, and pecans. Sprinkle mixture over dough.

  5. Roll up dough, beginning on the long side. Slice into 15 slices and place in a greased pan. Let rise in warm place until doubled in size — about 45 minutes.

  6. Preheat oven to 350 degrees.

  7. Bake for 20-25 minutes or until golden brown.

  8. While the rolls bake, stir together cream cheese, 1/4 cup butter, confectioner’s sugar, vanilla, and milk.

  9. Top baked rolls with frosting and serve.
