Smoked Turkey Chuckwagon Soup

Ingredients

  • 2 14-ounce cans reduced-sodium chicken broth
  • 1 15-ounce can white hominy, drained
  • 1 11-ounce can condensed tomato rice soup
  • 2 cups chopped smoked turkey (about 10 ounces)
  • 1/2 cup chopped yellow sweet pepper
  • 1/3 cup bottled salsa
  • 1 teaspoon ground cumin
  • 1-1/2 cups crushed tortilla chips (2-1/2 ounces)
  • Dairy sour cream (optional)

Directions

  1. In a large saucepan combine chicken broth, hominy, tomato rice soup, turkey, sweet pepper, salsa, and cumin. Bring to boiling; reduce heat. Simmer, uncovered, about 5 minutes or until sweet pepper is tender.

  2. Ladle into soup bowls. Top individual servings with tortilla chips and, if desired, sour cream.
