Chocolate Peanut-Butter Cookies

Ingredients

  • 1 cup butter -- softened
  • 1 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1/2 cup unsweetened natural cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup peanut-butter chips
  • additional sugar

Directions

  1. Preheat oven to 350F.

  2. In a large bowl, cream together butter and sugar with an electric mixer at

  3. medium speed until light and fluffy. Add egg and vanilla extract; beat well.

  4. In another bowl, combine flour, cocoa powder, baking powder, and salt, stirring

  5. until well blended.

  6. With the mixer on low speed, gradually add flour mixture to butter mixture,

  7. beating only until well blended. Stir in peanut-butter chips by hand.

  8. Drop by rounded teaspoonfuls onto parchment-lined cookie sheets. Sprinkle 1/8

  9. teaspoon sugar over each cookie. Using a flat-bottomed drinking glass dipped in

  10. additional sugar, flatten cookies to 1/4-inch thickness.

  11. Bake for 8 to 10 minutes, or until slightly set. Cool complete on wire racks.

  12. Store at room temperature in airtight containers.
