LC Peanut Butter Cup Ice Cream

Sometimes you’re in the mood for an ice cream that’s not just plain vanilla or chocolate. This delicious recipe is vanilla ice cream with peanut butter cups in it – and it’s all low carb!

Serves 2 people

Ingredients

  • 3/4 cup heavy cream
  • 1/2 cup half-and-half
  • 1/2 cup Splenda
  • 1/4 cup ice cold water
  • 1/2 tsp vanilla
  • dash salt
  • 5 low carb peanut butter cups

Directions

  1. Mix all but the peanut butter cups thoroughly and put it into your ice cream maker. Turn on and watch for about 25 minutes – it should start slowing to a halt when it’s thick enough.

  2. At this point chop up 3 of the cups into six pieces each and mix those in. Now really dice up the remaining 2 cups so that there is a good general mix of flavor and stir that in as well. Let it go around a few times to blend those in and serve.

  3. You can double the recipe if you’d like to make enough for four!

    • If you use Splenda in packets, be sure to adjust accordingly! The packets are a different level of sweetness compared to normal bulk Splenda.
