LC Dumplings for Soups

Ingredients

  • 3/4 c. of pork cracklings or rinds, crushed fine (Weighing it out on the scale it was 1.5 oz.)
  • 1/4 c. * Matzo Ball Soup Mix (put the rest in the freezer) *(This is cracker meal, plus seasoning and soda)
  • 2 whole x-large eggs, plus 1 yolk
  • 2 tbs. oil
  • 1/4 tsp. black pepper
  • Optional: 1 tb. chopped fresh parsley

Directions

  1. Place cracker mix and crushed pork rinds in a deep bowl.

  2. Add everything else and mix well. Chill for about 1/2 hour. Remove and make 12 little round balls. Keep chilled until you are ready to cook them.

  3. Bring 2 quarts of water or soup stock to boil

  4. then add balls and when stock begins to boil, place a tight fitting lid on top and simmer slowly for abut 45 minutes. I added my veggies and cooked chicken chunks

  5. the last 10 minutes.
