Ingredients
- 1 seedless cuke- peeled and sliced
- 2 medium ripe diced tomatoes
- can black beans
- 2 TBSP. minced red onion
- 2 TBSP. chopped cilantro
- 2 limes- juiced
- salt and pepper
Directions

Combine all ingredients and season with salt and pepper. Keep refrigerated until ready to serve. Makes 5 cups.
