Asparagus with Prosciutto

  • 1 bunch asparagus, trimmed and peeled
  • Prosciutto slices
  • 1/2 cup mayo
  • 1/4 cup roasted red peppers
  • 1/2 tsp sherry vinegar
  • 1/4 tsp hot smoked paprika


  1. Cook asparagus in salted boiling water until crisp-tender, 2 minutes. Drain and let cook, then pat dry. Wrap each spear with a slice of prosciutto.

  2. For the dip: Puree mayo with roasted red peppers, sherry vinegar and hot smoked paprika.
