Ingredients
- 1 bottle Wish-Bone Deluxe French Dressing
- 1 tbsp olive oil
- 1 small sweet onion, sliced thin
- 1 ear sweet corn, remove kernels from cob
- 1 lb. ground beef
- 1 pack taco seasoning
- 2 tsp harissa paste
- 1 pint heirloom cherry tomatoes, halved
- 9 oz. romaine hearts
- 1 cup shredded cheddar
- 5 oz. bag yellow corn tortilla chips, crushed
- 1 avocado, remove pit and dice

Heat olive oil in a large nonstick skillet over medium-high heat and cook onion, stirring occasionally for 4 minutes, or until starting to brown. Add corn and cook, stirring occasionally for 2 minutes, or until starting to toast. Add ground beef and cook, stirring occasionally, until browned.

Stir in taco seasoning and cook, stirring occasionally, for 2 minutes, or until well combined. Set aside to cool slightly. Add spicy harrisa sauce to taste.

Cut the tomatoes into halves. Then in a large salad bowl, toss romaine, tomatoes, chedar, corn, ground beef mixture with 1 cup of dressing.

Place the corn chips in a plastic bag to crush. Slice the avocado. Right before serving, add chips and toss until well combined. Sprinkle with sliced avocado. Serve with additional dressing.
