Kick-Ass Klam Chowdah

Ingredients

  • 2- 6.5 oz cans minced clam or 2 cups fresh minced clams w/juices
  • 3 to 4 strips bacon (recommend 3)
  • 3 medium potatoes
  • 1 medium onion
  • 3 cups light cream
  • 3 tlbs. flour
  • salt and pepper to taste
  • water

Directions

  1. Do this First

  2. Dice potatoes (with or without skin)

  3. Dice onion

  4. cook bacon, retain 1 tbls bacon fat

  5. add water to clam juice if it doesn’t already equal 1 cup

  6. Now:

  7. In a large saucepan, combine clam juice, potatoes, onion and bacon fat.

  8. add water to just cover contents

  9. Cover, bring to boil.

  10. Add flower, cover and simmer for 10 minutes.

  11. Crumble bacon into soup, add clams

  12. Cover and simmer for 15 minutes.

  13. Makes about 2 quarts…

  14. most excellent with fresh bread. Bon Appetit!!
