Pear salad w/ blue cheese & walnuts

Serves 8 people

Ingredients

  • 3 medium pears (optional canned pears)
  • 2 Tbl lemon juice
  • Mixed greens
  • 2 oz. blue cheese
  • 1 c. walnuts
  • 1/2 c. sugar
  • 2 tbl butter
  • 1/3 c. white wine vinegar
  • 1/3 c. oil
  • 1/3 c. pear nectar
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/8 tsp pepper

Directions

  1. Butter foil lined cookie sheet. Combine walnuts, sugar and butter in heavy skillet. Cook over medium high heat shaking occassionally, till sugar begins to melt. DO NOT STIR. Reduce heat to low and cook till sugar is golden, stirring occassionally. Pour walnuts on to cookie sheet and cool.

  2. Combine last 6 ingredients to make salad dressing.

  3. Brush sliced pears with lemon juice.

  4. To serve. Fan pears over salad greens evenly. Sprinkle with blue cheese and nuts and drizle with dressing.
