Beef Burgundy

Ingredients

  • 2 tbl oil
  • 2 lbs. sirloin
  • 1/2 lb. mushrooms
  • 1/4 c. oinion, chopped
  • 1/4 c. parsley
  • 2 sm. cloves garlic
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 stp oregano
  • 1/4 tsp basil
  • 1/4 tsp thyme
  • 1 small bay leaf
  • 3/4 c. tomato paste
  • 1/4 c. Burgundy
  • 2 1/2 c. hot water
  • 1/4 c. butter
  • 1 tsp salt
  • 1/3 c. milk
  • 3 c. potato flakes
  • 1 egg
  • 1/4 c. chopped green onion
  • 2 tbl chives
  • 1/2 c. parmesan cheese

Directions

  1. Saute beef in oil. Combine remaining ingredients and simmer 25 minutes until tender.

  2. Boil water, butter and salt. Add milk and potato flakes. Stir in egg and onion. Cool. Shape into 12-16 balls. Roll in cheese.

  3. Top beef with potato balls. Bake 375 for 15-20 minutes.
