Slow Cooker Shredded Italian Beef for Sandwiches

Ingredients

  • 1/2 to 1 jar Italian giardiniera, mild , 12 - 16 oz, drained (hot if you like with a bite)
  • 1/2 to 1 jar pepperoncini, 12-16 oz
  • 1 1/2 cups beef broth
  • 1 envelope Goods Seasons zesty Italian salad dressing mix
  • 1 (3-5 pound) any kind roast

Directions

  1. Place roast in slow cooker, tall rather than wide if you have a choice.

  2. Top roast with 1/2 jar each of giardiniera and pepperoncini for mild and whole jars for spicier. Mix salad dressing and broth and pour over roast. Cover and cook on Low for 18 hours.

  3. One reviewer added a few sliced green peppers to the crockpot an hour or so before it was done.
