LC PASTRAMI ROLL-EM-UPS

These are so easy they embarrass me, but they are so pretty and delicious that we’ve learned to live with the shame! Make sure your deli makes perfect slices of the best pastrami…and then you can’t miss.

Ingredients

  • 4 ounces shredded Swiss cheese
  • 1 cup sauerkraut, drained
  • 1/4 cup prepared, yellow mustard
  • 30 slices pastrami

Directions

  1. Combine the Swiss cheese and the sauerkraut. Spread a thin layer of mustard on each pastrami slice. Put a generous spoonful of the cheese mixture on each slice of pastrami. Roll the meat tightly and skewer it through the center with a cellophane tipped “party toothpick.” Refrigerate until serving.
