Chicken in Garlic and Shallots

This creates a great garlic-herb oil and the garlic cloves and shallots are great in mashed potatoes.

Serves 6 people

Ingredients

  • 10 chicken thighs
  • kosher salt
  • black pepper
  • 3/4 cup olive oil
  • 10 garlic cloves, peeled
  • 10 shallots, peeled and split in half stem to stem
  • parsley
  • sage
  • thyme

Directions

  1. Preheat oven to 350 degrees F.

  2. Season chicken liverally with salt and pepper. Toss with 2 tablespoons olive oil and brown on both sides in wide frying pan or skillet over high heat.

  3. Remove from heat and place chicken in oven safe casserole dish along with the garlic, shallots, herbs and the remainder of the olive oil (No need to chop the herbs, just place them around the chicken chunks).

  4. ver and bake for 1.5 hours.
