The use of chicken broth as the base for the vinaigrette eliminates the need for a lot of oil and adds a nice, mellow flavor. Add your own personal touch with sherry vinegar and a flavored oil such as garlic- or basil-olive oil.

Ingredients

  • 1/2 cup reduced-sodium chicken broth
  • 1 Tbsp balsamic vinegar
  • 2 tsp olive oil
  • 1 tsp Dijon mustard
  • 1 tsp dried oregano
  • 1/4 tsp table salt
  • 1/4 tsp black pepper, freshly ground
  • 6 cup mixed greens

Directions

  1. In a small bowl, whisk together broth, vinegar, oil, mustard, oregano, salt and pepper.

  2. Place greens in a medium bowl. Pour dressing over greens; toss to coat. Yields about 1 1/2 cups of mixed greens and 2 1/2 tablespoons of dressing per serving.
