Ginger syrup

Ingredients

  • 3/4 cup sugar
  • 3/4 cup water
  • 2 1/2 tablespoons matchstick-size strips peeled fresh ginger (about 1 ounce)
  • 1 teaspoon finely grated lemon peel

Directions

  1. Combine all ingredients in small saucepan; stir over medium heat until sugar dissolves. Boil until reduced to 3/4 cup, about 5 minutes.

  2. DO AHEAD: Can be made 2 weeks ahead. Cover and chill. Rewarm before serving.

  3. Could serve over pancakes.
