Berkau Bean & Barley Soup

Ingredients

  • 2 C mixed beans
  • 1 can tomatoes (diced or whole, cut up) or equivalent of fresh
  • 1 T (barely) Crazy Salt
  • 1 t regular salt
  • pepper
  • ham hock or smoked sausage
  • 1/2C - 3/4 C chopped onion
  • 1/4 C - 1/3 C chopped celery
  • 2/3 C - 3/4 C pearled barley

Directions

  1. *Soak beans – hot or cold method.

  2. *To cook, use fresh water to cover, plus some, beans in a large dutch oven.

  3. *Add all other ingredients to pot except barley.

  4. *Bring to boil, reduce to low simmer and cover.

  5. *Cook until all tender, about 1 ½ hours or cover and put in a 300º oven for 2 or 3 hours. Stir once or twice.

  6. *During last 45 minutes, stir in barley. You may need to add a little more water.

  7. *Can mash with a potato masher when done for more creamy soup texture.

  8. *Can also cook in crock pot all day on low, stir once or twice. (best)
