lemon-ginger scones

Ingredients

  • 1.5 c. white flour
  • 1.5 c. wheat flour
  • 1 TBSP baking powder
  • 1 c. sugar
  • rind of 1 lemon
  • 1 stick butter
  • 3/4 c. milk
  • 1 TBSP lemon juice
  • 1/4 c. candied ginger (chopped)
  • glaze:
  • 2 tsp lemon juice
  • 1 TBSP sugar

Directions

  1. eheat oven to 375. Mix dry ingredients (flour, sugar, baking powder, lemon rind). Cut in butter. Add milk, lemon juice, candied ginger and mix until moist. Roll out in a circle 3/4" thick and cut into wedges

  2. Mix glaze and brush over wedges. Bake for 15 minutes on parchment or until lightly browned.
