mediteranean 3 bean soup

Ingredients

  • .3 cup olive oil
  • 2 leaks coarsely choppedc
  • 2 stalks celery. coarsely chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth, fresh or canned
  • 1 teaspeoon thyme
  • 1 teaspoon marjoram
  • 1 bay leaf
  • pepper to taste
  • 1.5 cups cooked kidney beans
  • 1.5 cups cooked garbanzo beans
  • 1 pound string beast cut into 1 inch pieces
  • grated cheese

Directions

  1. heat the oil over moderate hear in a lage soup pot

  2. add the leeks celery and garlic and saute 3 to 4 minutes. ad the remain i gi ngredien ts except the string beans and cheese

  3. bring the soup to a boil then lower heat. simmer for 20 min

  4. add the string beans and simmer for 15-20 min more unitl the string beans are cooked but still crunchy.

  5. serve with grated cheese.
